Ever heard of Umami? We have all heard of the 4 tastes – sweet, salty, sour & bitter – but there is a 5th taste sensed by the taste buds. Umami refers to depth of flavor or a “pleasant savory taste”.
Umami was first discovered in 1908 by a Japanese chemist, Kikunae Ikeda as he tried to figure out what qualities made his soup so delicious. He concluded that it was high in glutamate (a protein-building amino acid).
A number of foods are naturally high in glutamate:
Mushrooms, tomatoes, shellfish & fish, beef & pork, cheese and green tea.
