One of my longtime favorite snack foods is microwave popcorn. I have long suspected it was probably not particularly healthy, so have tried to cut down from my former almost nightly snack. Then, while doing research for this blog, I stumbled across an article called 25 Seemingly Healthy Foods That Are Bad For You from Shape Magazine, and guess what tops the list – microwave popcorn! The good news, the article mentioned a do-it-yourself alternative, so I had to research that.
I found this simple recipe on AllRecipes.com
1/2 C. unpopped popcorn
1 tsp vegetable oil
- 1/2 tsp salt or to taste
- In a cup or small bowl, mix together the unpopped popcorn and oil. Pour the coated corn into a brown paper lunch sack, and sprinkle in the salt. Fold the top of the bag over twice to seal in the ingredients.
- **Special note as posted in many of the comments section for this recipe: Set bag UPRIGHT in microwave, rather than on side like commercial microwave popcorn bags to avoid burning!
- Cook in the microwave at full power for 2 1/2 to 3 minutes, or until you hear pauses of about 2 seconds between pops. Carefully open the bag to avoid steam, and pour into a serving bowl.
- Serving size 3 servings per bag.
